On the frigid morning of February 3rd, with a trailer filled will 18 tons of food waste, from pineapples to challahs and salad greens, ReCultivateNY officially began.
With the help of Custom Compost, we mixed the food waste with hot leaves, local horse manure and other local browns, to begin the microbial breakdown of those vegetables. Over the course of the next few weeks and months, with the help of millions of microbes, our food waste will mature into compost to then help nourish the apple trees of Twin Star orchard.
Peter, owner of Twin Star, and Hannah, orchard manager, find some discarded vegetables in the pile. In a matter of weeks, this lettuce and pepper will be black gold, beautiful compost for their new apple trees.
